Knowing their soils very well, the wine growers of the Cave de Rabastens have asked advice from technical and scientific organisations and they have fixed rules for planting and a very strict production.

They have imposed themselves an auto-discipline and have nominated approval commissions made up of administrators and experts who insure a severe selection. They verify the parcels of designated origins, in particular those for special vintages which depend on their soil, the age of the vine, yield and quality are also stricly controlled. Finally, by keeping track of the maturity of the grapes, harvesting takes place at the optimal moment.

When the vintage is brought to the cellar, technicians and oenologists take over from the wine growers. Each load is verified (weight, degree and sanitary state of the grapes) and then moved towards different reception plateforms according to grape sort, degree and quality. Domains,chateaux and special vintages are recieved and vinified seperately to ensure their specificity.
